
Sambal Buah Keluak Fried Rice (Recipe from Delphina Nobre, @supermumster_cooks)

INGREDIENTS (Serves 4 Pax)
200g Minced Pork (or Chicken/Prawns)
200g chopped Long Beans
6-10 chopped Chilli Padi
A jar of 2MAAW Sambal Buah Keluak
3 cups cooked rice (preferably overnight. Delphina used brown rice)
INSTRUCTIONS
1. Heat up 2tbsp Oil
2. Fry up the Long Beans + half the Chillis
3. Empty out the entire jar of 2MAAW Sambal Buah Keluak into the pan
4. Add the Pork
5. Mash it all up and fry for 3 mins or until the pork is cooked through and you are satisfied with the crunchiness of the long beans
6. Add in the cooked Rice and fry it all up, mixing well for about 4-5 mins.
Top the dish off with the remaining chopped Chilli Padi as well as a runny sunny side-up egg.
