Spiced Tomato Sambal on Grilled Eggplant (Recommendation from MamaG, 2 Mamas and A Wok)

INGREDIENTS (Serves 6-8 Pax)

1 Jar 2MAAW Spiced Tomato Sambal
4 Eggplant
Spring Onions (finely sliced)
2 TBSP Corn Starch
2 TBSP of Vegetable Oil Salt


1. Cut eggplant into slices lengthwise
2. Dust eggplant with some cornstarch
3. Heat oil in pan, panfry eggplant until cooked. Put aside
4. Fry Spiced Tomato Sambal
5. Top each eggplant slice with 1tsp of Spiced Tomato Sambal
6. Garnish with some spring onions
7. Serve
