Pan Fried Dumplings with Sambal Buah Keluak Foie Gras (Recipe from Nicola Ying, @prettyhungrybish)

INGREDIENTS (Serves 4 Pax)

250g Minced Pork
4-5 Garlic cloves
1 inch grated Ginger
1-2 tbs Black Vinegar
1-2 tsp Sesame oil
2-3 tbs of 2MAAW’s Buah Keluak with Foie Gras Sambal
Black Pepper to season
Chilli Oil
Chilli Padi (Optional)
Chives (Optional)
Dumpling Skin (Optional to make it*)

*To make the homemade dough:
Combine 250g plain flour and 100ml hot water until elastic and set aside. Followed by rolling out to preferred size and flour generously.


1. Combine all the ingredients in a bowl, mix well, and set aside for 20 mins
2. Wrap dumplings (Option to buy the dumpling skin or to make it*)
3. Oil the frying pan generously and place Dumplings in for 2-3 minutes until it browns
4. Add hot water (pre-boiled in the kettle) until it covers about half the dumpling
5. Place the lid over the frying pan to steam for approximately 4-5 minutes
6. Remove lid and leave uncovered for water to evaporate

Serve immediately. You may dip it with a side of chili oil or vinegar with julienned ginger.
