Fried Chicken in Spiced Tomato Sambal (Contributed by Elliott Rudge)

INGREDIENTS (Serves 4 Pax)

1 Jar 2MAAW Spiced Tomato Sambal
4 Eggplant
Spring Onions (finely sliced)
2 TBSP Corn Starch
2 TBSP of Vegetable Oil Salt


1. Marinatethechickeninlightsaucefor30-45min
2. Pour out the excess sauce, coat in cornflour to retain flavors, and fry on high heat for 3 minutes on each side
3. Remove
4. In a separate pan, fry onions till translucent
5. Add garlic, ginger, chili paid. Fry for 1 minute
6. Add 2MAAW Spiced Tomato Sambal. Fry for 1 minute
7. Add fried chicken. Toss for 1 minute
8. Add salt, pepper, and sugar to taste
9. Serve with rice!
