Apple Smoked Bak Kwa with Green Chilli Sambal (Recipe from Su-Lyn Tan @sulyntan)

2 Mamas and a Wok

Apple Smoked Bak Kwa with Green Chilli Sambal

INGREDIENTS

2 TBS Unsalted Butter
1 piece Apple Wood Smoked Bak Kwa, finely Diced
1 1/2 TBS 2MAAW Green Chilli Sambal (or to taste)
3 ears of fresh Corn, trimmed off the cob
Add fine sea salt to taste
1 TBS Soy sauce (@sulyntan uses the one that is for seafood so it has that touch of sweet umami!)
2 sprigs of coriander, coarsely chopped
Sour cream (optional)

INSTRUCTIONS:

1. Melt the unsalted butter
2. Sauté the Bak Kwa until it releases its aroma
3. Add the Green Chilli Sambal and fry until it too releases its aromas
4. Stir in corn
5. Season with some salt
6. Cook the corn to your preferred doneness (Tip:Su-Lyn has a penchant for really sweet corn and she likes it just barely cooked.)
7. Control cooking temperature so that the butter doesn’t burn
8. Taste and adjust seasoning with soy sauce
9. Remove from heat
10.Stir in coriander

Serve immediately.
Top with dollops of sour cream, if desired.
